just a quick question do i need 2 Thermometers one on the hot side and one on the cold side?

one on eace end is fine x

hot end is the priority, not much you can do about cool end temps ;) is normally your ambient room temp

If the cool ends too hot it's a good idea to make sure you're enclosure isn't next to a radiator or in direct sunlight.
Too cold and you can raise the ambient temperature by using a ceramic heater as a heat source.
