i have a microclimate thermostat and i have read on here conflicting ideas on where the sensor probe should be should it be inside the viv under the substrate direclty in the middle of the mat or stuck to the mat itself.
i know that the digital thermometer should be inside the viv to read the temp

If in a vivarium (which is how it sounds) the probe should be in direct contact with the mat. Weather you stick it to the mat or just weigh it down dosn't really matter so long as it is fairly secure.
Attach the sensor probe for the stat and the sensor probe for the digital thermometer together using rubber bands (do not use tape it is dangerous to snakes) then have both probes LAYING FLAT on the surface of the mat. That way you will be able to accurately monitor and adjust the surface of the mat. As said you can glue them to the mat but this can be a problem when cleaning out etc. I use a heavy hide to pin them down. If you do choose to use the hide to weigh them down make sure that the probes are not INSIDE the hide as if the snake lays on them it can cause problems so use the EDGE of the hide to do this.
