Ok I've just set up my vivarium to make sure it runs at the right temps! The temperature of the heat mat varies from 30.5 to around 32.5! The temperature of the substrate varies from 28.5 to around 29.7. Is this ok?

Thats fine. It may be worth making the layer of substrate thinner on top of the mat so it stays a bit cooler, but its ok as it is.

Cheers i did thin it out a bit anyway as the mat was getting to 37 but now only goin to 32! ill make it a bit thinner, cheers matty!
