can you feed corn snakes frozen/defrosted chicks? just to vary their diet a little?

You can do, I have done and I dont think its a problem at all as long as you dont do it often.

You may find it difficult to get them back onto rodents and you'll have to deal with what comes out of the other end

You can, but apparently they have very little nutritional value. If you want to vary diet a little why not feed both rats and mice? Rats have more nutritional value than mice but are higher in fat so should be fed less often.
