I have installed a thermometer into the vivarium with a thermostat but the thermometer is showing that the temperature is consonantly rising and dropping. Is there any way of stabilising the temperature or is this always going to happen because the sensor can't pick up just the heat from the heat mat?

I've found a lot depends on what thermostat you have Marcus. I had this napped when I had a microclimate on/off stat and it was because the stat was letting the mat get to a certain temp, switching it off and allowing it to drop a number of degrees before switching back on. I wasn't happy with that and changed to pulse stats and now my temps are virtually stable.

Are the probes for the thermostat and thermometer together, laid flat on the heatmat?
